Asparagus Soup | Cookout . 12
Intro
INGREDIENTS
3 bunches (2-1/2 pounds, 10 cups) asparagus
2 cups onions, chopped
2 medium potatoes, chopped
1/8 cup extra-virgin olive oil
3 cups vegetable stock
2 tablespoons fresh Italian parsely, minced
4 teaspoons lemon zest, finely grated
1 tablespoon fresh tarragon, finely minced
1 garlic clove, minced and mashed or pressed
